Greek-inspired Watermelon Salad
Ingredients
watermelon
1 small, cubed
cucumber
1, sliced
red onion
1/2, thinly sliced
feta cheese
200g, crumbled
Kalamata olives
1/2 cup
fresh mint leaves
1/4 cup, chopped
extra virgin olive oil
2 tablespoons
lemon juice
2 tablespoons
salt
to taste
black pepper
to taste
Steps
In a large bowl, combine watermelon, cucumber, red onion, feta cheese, Kalamata olives, and mint leaves.
Drizzle with olive oil and lemon juice. Season with salt and black pepper.
Toss gently to combine all the ingredients.
Chill in the refrigerator for at least 30 minutes to allow the flavors to meld together.
Serve cold and enjoy!
