Greek-inspired Watermelon Salad

Ingredients


  • watermelon

    1 small, cubed

  • cucumber

    1, sliced

  • red onion

    1/2, thinly sliced

  • feta cheese

    200g, crumbled

  • Kalamata olives

    1/2 cup

  • fresh mint leaves

    1/4 cup, chopped

  • extra virgin olive oil

    2 tablespoons

  • lemon juice

    2 tablespoons

  • salt

    to taste

  • black pepper

    to taste




Steps


  • In a large bowl, combine watermelon, cucumber, red onion, feta cheese, Kalamata olives, and mint leaves.

  • Drizzle with olive oil and lemon juice. Season with salt and black pepper.

  • Toss gently to combine all the ingredients.

  • Chill in the refrigerator for at least 30 minutes to allow the flavors to meld together.

  • Serve cold and enjoy!
