Mango Coconut Quinoa Bowl
Ingredients
quinoa
1 cup
ripe mango
1
coconut milk
1/2 cup
shredded coconut
2 tablespoons
fresh cilantro
1/4 cup, chopped
lime juice
2 tablespoons
avocado
1, sliced
red bell pepper
1, sliced
red onion
1/4 cup, thinly sliced
cherry tomatoes
1/2 cup, halved
salt
to taste
black pepper
to taste
Steps
Rinse quinoa and cook according to package instructions.
In a large bowl, combine cooked quinoa, diced mango, shredded coconut, chopped cilantro, lime juice, salt, and black pepper. Stir well to combine.
In a small saucepan, heat coconut milk over medium heat until warmed.
Divide the quinoa mixture into serving bowls. Top with sliced avocado, red bell pepper, red onion, and cherry tomatoes.
Drizzle warmed coconut milk over the quinoa bowls and garnish with additional shredded coconut and cilantro, if desired.
