Mango Coconut Quinoa Bowl

Ingredients


  • quinoa

    1 cup

  • ripe mango

    1

  • coconut milk

    1/2 cup

  • shredded coconut

    2 tablespoons

  • fresh cilantro

    1/4 cup, chopped

  • lime juice

    2 tablespoons

  • avocado

    1, sliced

  • red bell pepper

    1, sliced

  • red onion

    1/4 cup, thinly sliced

  • cherry tomatoes

    1/2 cup, halved

  • salt

    to taste

  • black pepper

    to taste




Steps


  • Rinse quinoa and cook according to package instructions.

  • In a large bowl, combine cooked quinoa, diced mango, shredded coconut, chopped cilantro, lime juice, salt, and black pepper. Stir well to combine.

  • In a small saucepan, heat coconut milk over medium heat until warmed.

  • Divide the quinoa mixture into serving bowls. Top with sliced avocado, red bell pepper, red onion, and cherry tomatoes.

  • Drizzle warmed coconut milk over the quinoa bowls and garnish with additional shredded coconut and cilantro, if desired.

  • Serve and enjoy!
