Rainbow Veggie Quinoa Bowl

Ingredients


  • quinoa

  • carrots

  • beets

  • yellow bell pepper

  • avocado

  • cherry tomatoes

  • baby spinach

    2 cups

  • almonds

    1/4 cup

  • feta cheese

    1/4 cup

  • olive oil

    2 tablespoons

  • lemon juice

    2 tablespoons

  • salt

  • black pepper

    to taste




Steps


  • Cook quinoa according to package instructions and set aside.

  • Peel and shred carrots and beets.

  • Dice yellow bell pepper and avocado.

  • Slice cherry tomatoes.

  • In a large bowl, combine cooked quinoa, shredded carrots, shredded beets, diced bell pepper, avocado slices, cherry tomatoes, baby spinach, and almonds.

  • In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper to make the dressing.

  • Pour the dressing over the quinoa bowl and toss to coat everything evenly.

  • Crumble feta cheese over the top.

  • Serve and enjoy!
