Rainbow Veggie Quinoa Bowl

carrots

feta cheese

olive oil

lemon juice

Steps
Cook quinoa according to package instructions and set aside.
Peel and shred carrots and beets.
Dice yellow bell pepper and avocado.
Slice cherry tomatoes.
In a large bowl, combine cooked quinoa, shredded carrots, shredded beets, diced bell pepper, avocado slices, cherry tomatoes, baby spinach, and almonds.
In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper to make the dressing.
Pour the dressing over the quinoa bowl and toss to coat everything evenly.
Crumble feta cheese over the top.
Serve and enjoy!
