Steps
Prepare sushi rice according to package instructions and let it cool.
Thinly slice the smoked salmon, pickled herring, cured reindeer meat, and gravlax.
Cut the cucumber and radishes into thin matchsticks.
Place a sheet of nori on a bamboo sushi mat and spread a layer of sushi rice over it.
Arrange a variety of sliced fish and meat along with cucumber and radish matchsticks on top of the rice.
Roll the sushi tightly using the bamboo mat and repeat with the remaining ingredients.
Slice each roll into bite-sized pieces.
Serve the Scandinavian smorgasbord sushi with rye bread, pickled onions, dill sprigs, wasabi, and soy sauce.
